Darcy's Aronia Blueberry Pie
A 9-inch double-crust pie where aronia meets blueberry for a deep, fuchsia-glazed filling worthy of any holiday table.
Ingredients
- 1 cup aronia berries, whole (fresh or frozen)
- 3 cups blueberries, whole (fresh or frozen)
- 1/3 cup flour
- 2/3 cup sugar
- 1 tablespoon lemon juice
- 2–3 tablespoons butter
- Double pie crust of choice
Instructions
- Mix the pie filling ingredients in a bowl. If using frozen berries, let them sit for about half an hour first — they'll thaw and release some sugar, giving the filling a beautiful fuchsia glaze.
- Prepare your double pie crust of choice.
- Add the bottom crust to a pie pan, then fill with the pie filling.
- Dot pieces of butter across the top of the filling.
- Add the top crust, crimp the edges, and cut a few slits to vent steam.
- Preheat the oven, then bake at 400°F for about 40 minutes, until the crust is golden brown and the filling is bubbly.
