  1. Rinse the fruit and chop into small pieces.
  2. Place the fruit in a heavy, medium-sized saucepan.
  3. Add the lemon juice and sugar. If your fruit measurements are exact, use 3/4 cup sugar; if it's more heaping (like ours usually is), go with the full cup.
  4. Set the pan over medium heat. Stir and bring the mixture to a boil, mashing the berries with a spoon or potato masher as you go — mash more for a smoother jam, less for a chunkier one.
  5. Once boiling, reduce the heat slightly and stir frequently. It should thicken to jam consistency in about 20 minutes.
  6. Put the hot, fresh jam into a clean 8-ounce jar, then place the canning lid and ring on top.
  7. Let it cool slightly before refrigerating.
Tip: While the jam cooks, sit your jar in a pan of boiling water — it'll come out clean and ready for filling.
